Pumpkin Maple Oatmeal

Every once in awhile you meet a friend and you just click. I find that girls have a tougher time clicking with other girls as opposed to men. Men can just shoot the shit with another guy, talk about sports etc. But us girls, well, we want to really like you and enjoy meaningful conversation and a long lasting friendship. When I met Jenn, she fulfilled all of these criteria as to what a friendship should be.

The moment I met Jenn I knew I was going to like her. We met while working at LivingSocial, and the first thing I noticed was that she brought her own lunch to her first day of work. I bring my lunch to work almost everyday, so I immediately had mad respect for her. Weeks turned into months and all of a sudden we became fast friends, and found that a love of food and healthy eating was one of the biggest things we had in common. It is Jenn who turned me on to adding a scoop of pumpkin puree to my oatmeal in the morning. And let’s just say that since the Fall of 2011, my life has been full of warm cups of steaming pumpkin oatmeal thanks to her serving suggestion.

Pumpkin Maple Oatmeal

Ingredients
  • ½ c oats
  • 1 c almond milk
  • 3 tbs pumpkin puree
  • 2 tsp good maple syrup
  • ½ tsp cinnamon
  • Dash of nutmeg
Instructions
  1. Prepare your oats on the stove by combining them with the almond milk.
  2. Cook on high heat, and when it boils lower the heat to simmer.
  3. Simmer for 5-7 minutes, and stir in the rest of the ingredients (pumpkin puree down to the dash of nutmeg) during the last 4 minutes of cook time.
  4. Serve immediately with a little more cinnamon as a garnish and enjoy!

Enjoy “Gonna Get Over You” by Sara Bareilles. This song became our anthem when we were working the late shift until 10pm. The office was always quiet, the phones were pretty dead, and we’d be in our cubicles jamming to this song counting down the minutes until we could leave!
