Fingerling Potato Salad with Roasted Red Peppers

I developed this fingerling potato salad recipe as part of an ongoing Brand Ambassadorship with Peapod. All opinions are 100% mine.

It’s finally June and that means it’s potato salad season! Fingerling potatoes are one of my favorites, they boil up quickly and they have a nice creamy mouth feel too. I went in an Italian direction for this pasta salad to keep it light and healthy. It’s sort of a riff on my mother’s Italian potato salad in which she boils up baby red potatoes and adds chopped olives, celery slices and copious handfuls of chopped parsley.

Potatoes are a great canvas to add strong flavors to so feel free to go on with your bad self and spice this up however you like, but for the love of all that is holy do not omit the roasted red peppers, these guys bring a deep smoky flavor to the party and you won’t want to miss it.
