Peach Cobbler for Two

Ingredients
- 2 peaches, thinly sliced
- 1 Tbs honey
- ½ tsp cinnamon
- Pinch of salt
- 1 Tbs coconut oil
- 1 handful rolled oats
- Pinch of cinnamon
- 2 tsp pure maple syrup
Instructions
- Preheat oven to 375.
- In a small bowl, combine peach slices, honey, cinnamon and salt. Set aside.
- In another bowl, combine the coconut oil, rolled oats and cinnamon.
- To assemble, line two ramekins with a little coconut oil to ensure the peaches don't stick. Then, add the peach slices and top with equal parts of crumble. Drizzle 1 tsp of maple syrup on each cobbler and bake for 30-40 minutes until golden and bubbly.
- Enjoy a la mode or with whipped cream. Happy Summer!
