Serves: 2
  • 2 peaches, thinly sliced
  • 1 Tbs honey
  • ½ tsp cinnamon
  • Pinch of salt

  • 1 Tbs coconut oil
  • 1 handful rolled oats
  • Pinch of cinnamon
  • 2 tsp pure maple syrup
  1. Preheat oven to 375.
  2. In a small bowl, combine peach slices, honey, cinnamon and salt. Set aside.
  3. In another bowl, combine the coconut oil, rolled oats and cinnamon.
  4. To assemble, line two ramekins with a little coconut oil to ensure the peaches don't stick. Then, add the peach slices and top with equal parts of crumble. Drizzle 1 tsp of maple syrup on each cobbler and bake for 30-40 minutes until golden and bubbly.
  5. Enjoy a la mode or with whipped cream. Happy Summer!
