Baked Ziti with Lamb Red Sauce

I am sharing the easiest meal with you today that is even more delicious when frozen and reheated. With starting a new job, working some evenings and traveling on the weekends, having the energy to get in the kitchen let alone go grocery shopping has been a challenge the past three months and it is so comforting to know that I have a freezer meal ready to go.

I made this recipe a few weeks back and it’s been chilling in my freezer ever since just waiting to be popped into the oven for a no mess weeknight meal. San Marzano tomatoes serve as the base and I also used a pound of ground lamb and lots of oregano to give it a nice Greek flavor. If lamb isn’t your thing feel free to substitute ground turkey or beef.
