When I think of a stay-cation, ideas of me in a fuzzy robe, eating clean and drinking tea start to ping around in my brain. Enter this bad boy, an idea that hit me a couple of weeks ago. I love eating vegetarian meals for lunch and on the rare occasion that I am home for lunch during the week or weekend, this smashed chickpea stunner will be a mainstay lunch meal for me.
I love the way that chickpeas and all legumes for that matter make me feel. I find they don’t weigh me down but are still full of protein so it’s just enough to get me over the hump of the day. I added a generous teaspoon of garam masala which is a spice mixture chock full of warm flavors like cumin and nutmeg and with fresh grated ginger, this flavor combination dresses up even the most boring can of chickpeas!
