I love salsa. I love it all from mild to spicy, from green to red, and I especially enjoy it in the summer time. I treat it like a summer fling, we hang out all summer then rarely see each other throughout the winter months. Rocky relationship aside, I find it to be a refreshing condiment on just about anything, so I like dreaming up new riffs on this Mexican classic. When my local grocery store had mangoes on sale, three for $1.98, I just couldn’t pass up the chance to make a mango salsa. I created this salsa around the sweet fruit and added a kick with some diced jalapeno, red onion, and vine ripe tomato. What you get is the perfect combination of sweet and heat. I may or may not have eaten this and only this with chips for dinner last night…it’s that good!

- 1 medium vine ripe tomato
- ½ mango diced
- ¼ red onion diced
- ½ jalapeno diced
- ½ tsp of salt
- Dice all of the ingredients and mix together in a bowl.
- Add salt and serve with tortilla chips or on top a piece of grilled fish or chicken.
