Roasted Zucchini, Red Pepper and Goat Cheese Sandwich

I developed this roasted zucchini sandwich as part of an ongoing Brand Ambassadorship with Peapod. All opinions are 100% mine.

Back in the day, meaning kindergarten through sixth grade, my lunch consisted of salami sandwiches. No mayo, no mustard, no cheese, just salami and a couple slices of bread. Sounds intriguing, I know. Thankfully, I branched out to better sandwiches that incorporated mustard, spicy peppers and even cheese when I got into my teens and early 20’s.

Flash forward to now and working a full time job, it can be really tough to be excited about the lunch I bring every day. Most of the time it’s leftovers or a salad, but this guy right herrrre will pretty much be the sassiest sandwich in your lunchbox. The goat cheese elevates it and makes you look like a real foodie and the roasted zucchini and peppers can be made ahead which means you can bring all of the elements separately to work and assemble a fresh sandwich at lunch time!
