Ahh I wish you could have smelled my oven while these bad boys were cooking. Flavorful chorizo with orzo topped with parm then stuffed inside a sweet red pepper, is this real life? This meal is the antidote to the December holiday craziness as you can prep it a day in advance if you are expecting company OR you can just make it on Sunday for yourself to eat all week for lunch. To make it a vegetarian meal swap the chorizo for zucchini and to up the health factor throw in some quinoa instead of the orzo!
