What is life without the heavenly combination of bacon and Brussels sprouts? Now that I’ve hopped back on the quinoa train, I am rediscovering how incredibly versatile it really is. It soaks up all of the bacon and parmesan goodness in this casserole and its hearty enough that the quinoa won’t soften or wilt if you make it ahead. Pair it with a light salad or even a fried egg for a quick leftover meal, it will not disappoint.
