Carrot top pesto, I know, it sounds like I’ve lot my mind however this is one of the best ways to get the most out of fresh carrots! I usually stick to the predictable herbs like basil and parsley for pesto, but when I received some gorgeous carrots from Peapod’s Farm Box I knew I had to transform them into my favorite sauce for pizza!
The pesto has a nice herby foundation of carrot flavor and I threw in some tomatoes directly into the pesto for some acidity as well. I topped with thin sliced yellow squash sourced from Lancaster County Pennsylvania, and added on some thick cut mozzarella with a sprinkle of parmesan. You have got to try this on your favorite dough or flatbread, it does not disappoint!
