In a small bowl, combine peach slices, honey, cinnamon and salt. Set aside.
In another bowl, combine the coconut oil, rolled oats and cinnamon.
To assemble, line two ramekins with a little coconut oil to ensure the peaches don't stick. Then, add the peach slices and top with equal parts of crumble. Drizzle 1 tsp of maple syrup on each cobbler and bake for 30-40 minutes until golden and bubbly.
