One Pan Rainbow Trout with Potatoes, Olives & Tomatoes

One pan dinners are my jam. Not only do they make clean up easy but they also are a great way to build flavor throughout the entire dish. This guy starts with thinly sliced baby red potatoes that are then pan fried to perfection. Next comes the olive and tomato sauce that is simmered with onions and once that does it’s thing the rainbow trout makes it’s way to a screaming hot pan for a good ole sear.
